Olifantsberg’s varietal range represents just the beginning of what the estate offers, with wines that are best described as honest expressions of the land and its character. Each vineyard batch is vinified separately and carefully blended to highlight the full varietal character and subtle nuances of the grape. This single-vineyard bush vine, planted in 1982 in the Breedekloof Valley, benefits from old vines that deliver depth, intensity, and complexity. The wine is matured for nine months in oak, resulting in an elegant mouthfeel, balanced acidity, and layered fruit character. Variations in vine growth and foliage across the vineyard are carefully managed, with selective harvesting to ensure optimal quality and consistency, showcasing the enduring value and personality of these historic vines.
